Sweet tea and zucchini pie
and grilled pepperoni pizza...
Zucchini Pie
2 ready made pie crusts pre-baked as directed. Or make your own!
Preheat oven to 325.
Saute 1 clove minced garlic in 1 TBS olive oil.
Chop one onion and add.
Stir in 1 sliced zucchini and 1 sliced summer squash. Saute until tender. Add salt and pepper to taste.
In a bowl combine 1.5 cups shredded mozzarella, 1.5 cups shredded cheddar and one cup mayonnaise.
Slice 1-2 tomatoes.
Layer in each pie shell: tomatoes, zucchini mixture, top with half the cheese.
Bake for 40 minutes.

I got a new cookbook - Country Cooking with Trisha Yearwood. Amazing recipes that my Grandma cooked and my Mommy. This recipe is from there - only I didn't put in the water chestnuts because John doesn't like them.
The pie in the back has a cup of spaghetti sauce instead of the tomatoes. It turned out a little sweeter. I like the one with tomatoes better.
John hardly ever buys himself anything. Today, he got a smoker grill. So, Jaima and Daddy went through the recipe book that came with it and decided to grill a pizza since we didn't have any beef thawed. It turned out EXCELLENT and we ate it before I could take a pic. Jaima is one good cook!
I also love a good glass of sweet tea. I usually make a homemade syrup, but I cheated today and made it with my Keurig coffee maker. I like to drink the first glass right after it's brewed, when it's still kinda warm. Trisha Yearwood said that in her book, too. Then, I have to have tons of ice for the rest. I figure since I don't put sugar in my coffee or hot tea anymore, I can indulge in my summertime favorite!
