Stuffed Pepper Casserole

Preheat oven to 350.

2 lbs hamburger, browned, seasoned with 1 TBS taco seasoning and 1 TBS pepper steak seasoning, salt and pepper. Add one chopped onion and 1 cup chopped peppers (I use yellow, green and red - but if you only have green that's fine!). Drain grease if needed.

Puree one can stewed tomatoes - or use fresh - and add to mixture. Drain and rinse one can black beans and add. Add 1/2 cup taco sauce or salsa.

Prepare 2 cups rice according to package directions. Stir in.

OK - here's the fun part: Spray a 9x13 casserole with cooking spray. Pour in the beef mixture. Top with shredded cheddar, pepper strips and tortilla chip strips (found in the salad toppings section).

Bake 30 minutes or until cheese is bubbly.
Serve with hot sauce and sour cream if you like.

I invented this recipe because we love stuffed peppers but hate all the work of stuffing them! You can also put a cup of the casserole in a tortilla and eat it that way.
